A Merry Mega Christmas

Merry Christmas! I'd like to share a mega event  happened a few weeks back when I finally met up close one of my most influential person. I tried to not to be overwhelmed or  too excited about it. My mouth was literally zipped and the details of the meet - up was completely confidential.

So who am I referring to? The picture speaks itself ---














I was star strucked at first however her genuine warmness settled all the heart pounding feeling. The photos says it all but those behind the scenes are priceless :)

My Kitchen Chronicles

Hi! It's been a while. Hope everything is fine by God's grace. I'd like to share snapshots of my favorite dishes. I love to eat as most of us do and what's best way to eat your favorite foods is by learning how to cook and perfect it! :) 


Buttered Cheese Puto - The very 1st baking recipe I tried. I could remember how excited I am waiting patiently for the puto to cook and at the same time wondering how it taste. Not your ordinary puto cheese in town. So cheesy! :)


Banana Cake - This is one of my childhood favorites and my 1st basic cake. I can't believe I am able to create this wonderful recipe.


Orange Pork Cutlets - Inspired by Chowking's Orange Chicken. 


Rottisserie Garlic Spring Chicken - The very 1st  lechon manok grilled  in my mini rotesserie oven. It took 2 hours to cook.


Penne Pasta - Recreating my all time time favorite spaghetti to a gourmet sweet pasta. You should taste it! :)


Seafood Pasta - How would u like your favorite seafoods on top of a gourmet pasta? :)


Crabs in Coconut Milk - There are many ways to cook crabs however the coconut milk adds the richness of flavor and it complements crab's full taste :)


Garlic Pepper Shrimp - A classic way to cook shrimps with a twist of pepper :)



Aloha Fried Chicken - Deep fried marinated spring chicken. 


Moist Chocolatey Cake - This is my very first advance cake. So much to do yet very satisfied with the finish product :)


Mango Shortcake - Inspired By Sharon @ Home Magazine's Strawberry Shortcake. No strawberry available so I recreated the recipe. It's full of flavor.


Chocolate Muffin - My 31st birthday giveway for my friends and team mates :) Baked as early as 4am, my shifts starts at 6:45 pm :)


Mamon - My very first mamon :)


Blueberry Muffin - My very 1st instant recipe mix I baked. It tastes good, so easy to prepare however I still prefer baking from scratch :)


Beef Caldereta - I like any dish that has tomato sauce and this is not an exemption :)

Sunrise

I feel blessed that in one of my trips, I am able to view the sunrise up close. It's not all the time I got to witness such marvelous sight because of the kind of work that I have. It feels so good that I have nothing  but praises to GOD. Truly that when you are close to nature, you are closer to HIM.


Through the years, the SUNRISE teaches me the value of hope. There is a perfect time for everything and the virtue of patience pays off well. 
SUNRISE reminds me that at the end of the dark tunnel there is light that illuminates  and radiates from within, that allows you to influence and inspire others.
Most importantly, SUNRISE signifies a new beginning.


May we be strong and be not afraid for GOD is with us.
Welcome the new month with a renewed vigor and strength.

Fufu's 1st Summer

Hello! I am on an official summer trip bound North and here I am in the island of Bantayan. What makes this trip special is because Fufu is spending her very 1st summer!







FUFU is this cute little puppy I saw roaming around in JY Square Rotunda soaked wet and seemed so cold. I walked near her and she hurriedly run towards me seeking comfort.  There was an instant connection between us. 






I don't have intentions to adopt her however when I walked away, she followed me, so I took it as a sign and brought her home with me.




And here is FUFU enjoying her first vacation.

Milestone

Finally, it's April at last! I'd like to thank everyone who reads my blog. I appreciate much your feedback and am greatful for your kind and encouraging words. We will definitely taste more slices of life :)

Mamon Madness

Hi! Here is my very first recipe that I would like to share, my own version of MAMON. I love baking. It relaxes me. I'm amaze how simple ingredients such as flour, eggs, baking powder can create a magnificent masterpiece.




Mamon is a very  popular sponge cake. It is one of our popular dessert, and an all favorite in bakeries. Here is the full recipe, you may want to try it for yourself.







Ingredients

  • 1 cup cake flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cream tartar
  • 2 teaspoons lemon juice
  • 1/2 cup vegetable oil
  • 6 eggs, yolk separated from white

Cooking Procedure

  1. Combine cake flour and baking powder then mix well. Set aside.
  2. Combine egg whites and cream of tartar then beat until the mixture becomes somewhat fluffy.
  3. Gradually add sugar then continue beating until the texture becomes fluffier. Use high speed for this process; this should take around 4 to 8 minutes.
  4. Add lemon juice and egg yolks then mix again.
  5. Put-in vegetable oil then mix for a few seconds then gradually add cake flour-baking powder mixture. Continue mixing until the texture becomes smooth.
  6. Heat the oven to 350 degrees Fahrenheit
  7. Grease the molds using cooking spray then scoop some of the mixture into the mold. Continue doing this process until all the mixture is used-up.
  8. Bake for 13 to 16 minutes or until it passes the toothpick test.
  9. Remove from the oven and let cool.
  10. Serve. Share and enjoy!

For ice cream enthusiasts, a special treat for all of us, MOCHIKO (mochi ice cream) is now available for your indulgence.



Mochi Ice cream originated in Japan. 
It is a small round dessert ball made from mochi (sticky rice) with an ice cream filling.

Best sellers are Black Sesame, Green Tea, Azuki, and Cookie Dough.
